Fiesta Stuffed Peppers

Cook time: 20 minutes
Serves 12 people

Ingredients

  • 12-15 Mini Sweet Peppers
  • 8 oz cream cheese, softened
  • 8 oz cheddar, Monterrey jack or any other cheese, shredded
  • 1 tbsp lime juice
  • 1 tbsp cilantro
  • Garlic powder

Directions

  1. oven to 350.

  2. Cut peppers in half.

  3. Mix cream cheese, shredded cheese, lime juice, cilantro together in a bowl.

  4. Either pipe or spoon mixture into peppers, bake for 20 mins or until cheese is melted and peppers are soft.
