Lamb/Goat Curry

Ingredients

  • 1 Tbsp cayenne pepper
  • 3 Tbsp ground coriander
  • 8 black peppercorns
  • 1" cinnamon stick
  • 1 medium onion, chopped
  • 2 serrano peppers, chopped
  • 1 Tbsp poppy seeds
  • 2 cloves
  • 1 cardamom pod
  • 2 Tbsp coconut
  • 8 stalks cilantro
  • 1 tomato, chopped
  • Salt to taste
  • 1.5 lb lamb or goat cut into 2" pieces, bone-in

Directions

  1. Dry roast onion, reserving 2 1" pieces, over med-high heat. After onion is beginning to turn clear, add remaining ingredients up through coconut. Roast for 5 min.

  2. Add roasted ingredients and cilantro to the blender with some water and blend. Add water as needed.

  3. Heat a pressure cooker over medium heat. Add tomato, and remaining onion. Add meat to pan and brown evenly. Add salt to taste.

  4. Pour blended ingredients into pot. Pressure cook until steam escapes about 6-7 times.

  5. Alternate method: Pour meat and sauce into a slow cooker and cook on low until meat is tender.
