Gourmet Egg Salad

Haven’t tried.
I have a regular egg salad recipe in this book…this one sounds very good also. I would consider serving in a pretty tomato.

Ingredients
- 6 large eggs
- 1/4 cup Hellmans mayo
- 2 tablespoons minced red onion
- 1 tablespoon fresh parsley finely chopped
- 1/2 stalk celery finely chopped
- 2 teaspoons Dijon mustard
- 1 lemon juiced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper

In a medium saucepan, over high heat, add eggs and cover with 1 inch of water. Bring to a boil. Remove pan from heat, cover and let sit for 10 minutes. Fill a medium bowl with 1 quart water and 1 tray of ice cubes. Transfer eggs to ice water and let sit for 5 minutes. Peel and dice eggs.

In a medium bowl mix together all ingredients. Serve.
