Frosty Strawberry Squares

Ingredients

Directions

  1. Stir together…

  2. 1C flour

  3. 1/4 C brown sugar

  4. 1/2 C melted butter

  5. 1/2 chopped pecans

  6. Spread 2/3 of the mixture evenly in a 9×13 baking pan and bake at 350 degrees for 20 mins. Let cool before adding the topping. (I refrigerate until cool…or even til cold)

  7. Beat the following ingredients on high speed until stiff peaks are formed (10 mins)

  8. 2/3 C sugar

  9. 12 oz frozen or fresh strawberries (I use fresh when in season)

  10. 2 egg whites

  11. 1 to 2 T lemon juice

  12. 1 t vanilla (optional) (I don’t use this)

  13. Then fold in 1 C whipping cream (whipped if using heavy cream)

  14. Top with remaining pecan mixture (crumbled)…. cover with plastic wrap and freeze.

  15. Serve frozen…in squares.

  16. This is a wonderful summer dessert.
