Jam Shortcakes

Serves 15 people

Ingredients
- 145 g butter
- 1 t vanilla essence
- 1/2 C icing sugar
- 1/2 C cornflour
- 3/4 C flour
- 4 T jam
- frozen berries if desired
- icing sugar to dust
Directions

Soften butter until just melted.

Mix in vanilla, icing sugar, cornflour and flour until just combined.

Press 2 T of mixture into greased cup cake pans, to just fill pan.

Make dent in top of mixture and place 1/2 t jam in dent.

Top with frozen berry if using.

Bake at 160oC approx 35-45 minutes, until cooked.

Cool before removing from tins.
