Roasted Beets with Orange and Thyme

  1. Preheat oven to 425

  2. Place 1 bunch beets (about 1 1/2 lbs), scrubbed, peeled and cut into 1" pieces, on a large piece of foil on a baking sheet

  3. Drizzle w/1 tsp extra-virgin olive oil and season w/coarse salt and pepper. Fold foil around beets and crimp ends to form a packet. Roast until tender when pierced w/knife, about 45 min

  4. Transfer beets to a large bowl and drizzle w/2 T red-wine vinegar, 1 tsp honey and 1/4 c fresh orange juice. Top w/2 tsp finely grated orange zest and 2 tsp fresh thyme leaves
