Aunt Brenda’s Sweet Potatoe Souffle’

Cook time: 25 minutes

Ingredients

  • 6 cups of cooked sweet potatoes
  • 1/2 cup brown sugar
  • 2/3 cup sugar
  • 1/2 cup butter, melted
  • 2 eggs
  • 1/4 teaspoon salt
  • 1/4 cup lemon juice
  • 1/2 cup milk
  • miniature marshmallows

Directions

  1. Beat together all of the ingredients and place in a greased 2 quart casserole dish.

  2. Bake 375* for 25 minutes.

  3. Top with marshmallows and place under broiler till marshmallows are browned.
