BLT Macaroni Salad

Ingredients

  • 12 ounces macaroni
  • 2/3 cup mayonnaise or salad dressing
  • 1/3 cup sour cream
  • 1 tablespoon white wine vinegar
  • salt and pepper to taste
  • 4-6 slices crisp bacon, crumbled
  • 4 green onions, finely chopped
  • 1-2 large tomatoes, seeded and chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 hard-boiled eggs, chopped

Directions

  1. Cook macaroni in seasoned water until just al-dente.

  2. Mix together all ingredients and refrigerate, tightly covered 1 to 24 hours. Serve on a bed of lettuce.
