Cafe Style Ginger Gems

Ingredients
- 350 g golden syrup
- 225 g butter
- 2 C flour
- 1/2 C brown sugar
- 1 t each: baking soda, baking powder, ground cinnamon
- 2 T ground ginger
- 1/2 t mixed spice
- 1 C milk
- 2 eggs, lightly beaten
Directions

Melt golden syrup and butter.

Combine all dry ingredients in a bowl.

Add milk and eggs to butter/syrup mixture.

Add to dry ingredients and beat vigorously.

(This is a runny mixture).

Pour into oblong mini loaf tins and bake at 180oc for 20-25 minutes.
