Ingredients
- 1 pkg (10 oz) frozen chopped spinach, thawed and squeezed dry.
- 1 c mayo
- 1/2 c chopped red pepper
- 1 can (14oz) artichoke heart quarters, drained and coarsley chopped.
- 1/4 c shredded cheese (either monterey jack or mozzarella)
- 1 cup freshly grated parmesan cheese
Directions

Mix mayo and parmesan cheese. Stir in artichoke hearts, spinach and red pepper.

Spoon into 1 quart casserole pan and sprinkle with shredded cheese.

Cover and bake at 350 for 15-20 min or until cheese is melted.

serve warm on chunks of whole wheat bread, crackers, or tortilla chips.
