Ingredients
- 1 lb brussel sprouts
- 1/2 stick butter
- 4-5 slices thick cut bacon
- 2 tbs coarse grain mustard
- 1 cup heavy cream
- 1 tbs course black pepper
- Salt to taste

Cut the tough ends off the sprouts and score them (on the end) with an x : you will loose some of the tough outer leaves but that’s okay.

place in microwave safe bowl with about 1/2inch to 1in of water. Cover tightly with plastic wrap and nuke for about 8 min. (This entirely depends on how big the sprouts are. you want them tender but not mushy, they should still have a bite to them as they will cook more later on the stove).

cut the bacon into a small dice and fry until crispy in a large saute pan. Remove and drain the bits on a paper towel. Dump the excess bacon grease out of the pan (leave a little ~1tbs for flavor). Place butter in pan and melt. Add cooked sprouts to butter and cook for about five minutes. add cream, mustard (mixing well) and pepper. Let cook for about two minutes, add cooked bacon back to the pan, stir.
