Ingredients
- bunch of kale or similar
- pine nuts, toasted
- garlic
- anchovy
- red chilli
- mushrooms chopped
- dry white wine
- 2 tomatoes chopped
- lemon juice, say 1/2 a lemon
- olives (optional)
Directions

Wash the kale, strip it from the stalk and slice fairly thinly (e.g. 5-10mm)

Fry garlic, anchovy, chilli in olive oil

Throw in the kale and tomatoes

Cook it, you can’t hardly overcook it.

Meanwhile, toast pinenuts

Add white wine generously

Keep cooking

Meanwhile, the pasta water would have boiled. As the pasta cooks

Add the lemon juice and olives
-
Add the mushrooms
-
Serve topped w pine nuts, parmesan & black pepper
