Green Beans Amandine

Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 red bell pepper cut into thin strips
- 1 pound green beans, trimmed (choose thinner beans, all the same size, for better flavor and even cooking)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup water
- 1 teaspoon grated lemon zest
- 1 tablespoon fresh lemon juice
- 1/4 cup slivered almonds

In a large skillet, heat the oil over medium-low heat. Add the bell pepper and green beans and stir to coat. Add the salt, black pepper and water and bring to a boil. Reduce the heat to a simmer and cook for 7 to 10 minutes, or until green beans are tender.

Add the lemon zest, lemon juice and almonds and toss to combine. Serve hot, at room temp, or chilled.
