Chicken Soup

Prep time: 15 minutes
Cook time: 60 minutes
Serves 4 people
Ingredients
- Large package of chicken wings
- large onion
- 2-3 carrotts
- 1 leek
- 2-3 stalks celery
- parsley
- salt
- pepper
- chicken flavored better than bouillon

Peel all vegetables and sauté over low heat in a little olive oil until tender.

Meanwhile, place rinsed chicken pieces in a large pot and cover chicken by 2 inches with water. Add about 1 teaspoon of salt. Let slowly heat, and skim anything that rises to the top. After about 30 minutes, add vegetables and continue simmering. After another 30 minutes, taste, and add some pepper, parsley and bouillon, if needed.

For best flavor, keep heat to a simmer, not a rolling boil.
