Chili

Serves 5 people

Ingredients

  • 1 pound of ground meat, turkey or beef
  • 15 oz San Marzano tomatoes or stewed tomatoes
  • 3 cans of beans, northern, black, (1) chili hot
  • 1 can Hoppin John (optional)
  • 1 large onion
  • 2 cloves garlic
  • 3/4 cup ketchup
  • 1 tsp chili powder
  • 1 bay leaf
  • Optional - corn, zucchini, mushrooms

Directions

  1. Saute meat until no longer pink. Drain and set aside.

  2. Saute onion and garlic in a little olive oil until tender. Add tomatoes, beans, bay leaf, chili powder, meat, ketchup and 2 cups water. Bring to a simmer. Add corn, zucchini and mushrooms now if desired. Cook for about 30 minutes. Add salt at end if needed.
