Baked Potato Soup

Ingredients
- 3 tbsp. butter
- 1 c diced onions
- 2 tbsp. flour
- 4 c chicken broth
- 1/4 c cornstarch
- 1 1/2 c instant potato flakes
- 1 tsp. salt
- 3/4 tsp. pepper
- 1/2 tsp. dried basil
- pinch of thyme
- 2 baked potatoes (peeled/chopped) = 2 c
- 1 c half and half
- Garnish
- 1/2 c shredded cheddar cheese
- 1/4 c crumbled and cooked bacon
- snipped chives
Directions

Melt butter and sauté onions

Whisk in flour until smooth paste

Add broth and 2 c water & bring to a boil

Add cornstarch & instant potato flakes

Season with salt and pepper & dried herbs

Lower heat, simmer for 5 minutes

Add chopped potatoes and half-and-half
-
Bring back to a boil, then simmer 15 minutes

Garnish with Cheddar chees, bacon and chives
