Baked Potato Soup

Ingredients

  • 3 tbsp. butter
  • 1 c diced onions
  • 2 tbsp. flour
  • 4 c chicken broth
  • 1/4 c cornstarch
  • 1 1/2 c instant potato flakes
  • 1 tsp. salt
  • 3/4 tsp. pepper
  • 1/2 tsp. dried basil
  • pinch of thyme
  • 2 baked potatoes (peeled/chopped) = 2 c
  • 1 c half and half
  • Garnish
  • 1/2 c shredded cheddar cheese
  • 1/4 c crumbled and cooked bacon
  • snipped chives

Directions

  1. Melt butter and sauté onions

  2. Whisk in flour until smooth paste

  3. Add broth and 2 c water & bring to a boil

  4. Add cornstarch & instant potato flakes

  5. Season with salt and pepper & dried herbs

  6. Lower heat, simmer for 5 minutes

  7. Add chopped potatoes and half-and-half

  8. Bring back to a boil, then simmer 15 minutes

  9. Garnish with Cheddar chees, bacon and chives
