Skillet-Fried Fish

Ingredients
- 6 - 6oz trout (other) fish
- 2/3 c yellow cornmeal
- 1/4 c flour
- 2 tsp. salt
- 1/2 tsp. paprika
- Dash of Cayenne (optional)
- 1 - 5 1/3oz. evaporated milk
- cooking oil
Directions

Stir together dry ingredients.

Dip fish in evaporated milk, coat w/ mixture.

Heat oil and cook fish 4-5 min, turn 4-5m.

Cook a few fillets at a time, add more oil.

Drain on paper towel.
