String Cheese Chicken Roulade

Ingredients
- 6 large chicken cuts, pounded flat
- basil
- 6 pieces string cheese (1 oz each)
- 1/2 cup almond flour
- 1/2 cup Parmesan cheese
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1 tsp Italian seasoning
- 1 egg
- 2-3 tbsp water
- 2 cups marinara sauce, heated
- 1 cup shredded Mozzarella
- 1/4 cup Paremsan

Preheat oven to 350F; lightly grease 9×13 dish

In a shallow bowl, combing almond flour, Parmesan, pepper, salt, and Italian seasoning; in a separate bowl, beat egg with water

Lay chicken cuts on a flat surface and sprinkle a small amount of basil on each one; place a piece of string cheese on each cut and roll tightly

Gently dip each roll in egg wash and then into seasoning mixture until well-coated; place seam-side down in greased dish

Bake 18-20 min until lightly browned; remove from oven and pour warmed marinara sauce around chicken, leaving tops exposed

Sprinkle with remaining cheeses and bake 15-20 min until hot and bubbly

Allow to set for 5-10 min before serving
