Ingredients
- 1 celery root peeled, cut into 1/4" wedges
- 2 large carrots thinly sliced
- 1 tbsp. oil
- 2- 1 LB boneless rib eyes
- salt & pepper
- 1 tbsp. unsalted butter
- 2 tsp. horseradish
- 1 tsp. Dijon mustard
- 1/4 c sliced chives
Directions

Preheat broiler w/ rack 8" from heat.

Toss celery root and carrots w/ oil on baking sheet.

Dry steaks, add to sheet. Salt and pepper all.

Broil 8-10 min until browned and tender.

Flip veggies 1/2 way through.

Tent w/ foil and rest 10 minutes.

Combine butter, horseradish, mustard, salt and pepper.

Spread on steaks & sprinkle w/ chives.
