Rib eye W/ vegetables

Ingredients

  • 1 celery root peeled, cut into 1/4" wedges
  • 2 large carrots thinly sliced
  • 1 tbsp. oil
  • 2- 1 LB boneless rib eyes
  • salt & pepper
  • 1 tbsp. unsalted butter
  • 2 tsp. horseradish
  • 1 tsp. Dijon mustard
  • 1/4 c sliced chives

Directions

  1. Preheat broiler w/ rack 8" from heat.

  2. Toss celery root and carrots w/ oil on baking sheet.

  3. Dry steaks, add to sheet. Salt and pepper all.

  4. Broil 8-10 min until browned and tender.

  5. Flip veggies 1/2 way through.

  6. Tent w/ foil and rest 10 minutes.

  7. Combine butter, horseradish, mustard, salt and pepper.

  8. Spread on steaks & sprinkle w/ chives.
