Chicken Scampi

Ingredients
- 10 cloves garlic, peeled
- olive oil
- White Sauce
- 1 tbsp. butter
- 2 tbsp. flour
- 3/4 c hot milk
- Scampi sauce base:
- 3 tbsp. butter
- 2 tbsp. crushed garlic
- 2 tbsp. Italian season blend
- pepper
- 3/4 tsp. red pepper flakes
- 3/4 c white wine
- 1 c chicken broth
- 2 bone/skinless chicken breasts, sliced
- 1 red bell pepper, julienned
- 1 red onion, thinly sliced
- 8 oz. cook angel hair pasta

Preheat oven to 400

Sauté garlic cloves in olive oil. Bake 20-30min

Reserve roasting oil when done.

Make white sauce – melt 1 tbsp. butter.

Whisk in flour, stir constantly until smooth.

Gradually add hot milk, whisk continually.

Simmer until thickened, set aside.

Make scampi sauce; heat 3 tbsp. butter.

Add crushed garlic, seasoning blend, pep.

Cook about 2 min over low heat.

Add wine and chicken broth.

Simmer 30 min.

Add 1/4 c of white sauce to scampi sauce.

Whisk to combine all ingredients.

Simmer until thickened.

Heat reserved oil & sauté chicken until almost done. Add bell pepper, onion sauté more.

When chicken is done, add scampi sauce.

Simmer until all is warm. Add garlic cloves.

Plate pasta in warm bowls, pour chicken over.
