Country Fried Flounder

Ingredients
- 2 LB flounder fillets
- 1 c buttermilk
- 1 c cornmeal
- 1/2 c self rising flour
- 1 tsp. salt
- 1/2 tsp. paprika
- 1/2 tsp. pepper
- 2 c vegetable oil for frying
- 2 lemons, quartered
Directions

Cut fillets into 6 portion. cover w/ buttermilk

Refrigerate 1 hour.

Combine cornmeal, flour, salt & spices.

Coat drained fish on both sides w/ mixture.

Lay out on plate & refrigerate 30 minutes.

Heat oil. Fry fish. Turn once until golden.

Drain on paper towels.

Serve on a warm plate w/ lemon quarter.
