Ingredients

  • 3 tbsp. butter
  • 1 shallot, minced
  • 2 tbsp. flour
  • 2 c half and half
  • 1 tbsp. clam juice
  • 2 tbsp. dry white wine
  • 4 c coarsely chopped spinach
  • 1 c chopped artichoke hearts
  • 8 large shrimp, peeled, deveined, diced
  • pinch of cayenne pepper
  • salt and black pepper
  • 1/2 c shredded mozzarella cheese
  • Garlic-cheese bread or grille toast to dip

Directions

  1. Melt butter and sauté shallot until translucent.

  2. Whisk in flour to make a smooth paste.

  3. Add half and half, clam juice, wine.

  4. Simmer a few minutes, until thickened.

  5. Stir frequently to keep sauce smooth.

  6. Add spinach, artichokes, and seasonings.

  7. Whisk in mozzarella. Stir until melted/smooth

  8. Pour in warm bowl.

  9. Serve with bread or toast.
