Ingredients
- 3 tbsp. butter
- 1 shallot, minced
- 2 tbsp. flour
- 2 c half and half
- 1 tbsp. clam juice
- 2 tbsp. dry white wine
- 4 c coarsely chopped spinach
- 1 c chopped artichoke hearts
- 8 large shrimp, peeled, deveined, diced
- pinch of cayenne pepper
- salt and black pepper
- 1/2 c shredded mozzarella cheese
- Garlic-cheese bread or grille toast to dip
Directions

Melt butter and sauté shallot until translucent.

Whisk in flour to make a smooth paste.

Add half and half, clam juice, wine.

Simmer a few minutes, until thickened.

Stir frequently to keep sauce smooth.

Add spinach, artichokes, and seasonings.

Whisk in mozzarella. Stir until melted/smooth

Pour in warm bowl.

Serve with bread or toast.
