Cheesecake Cookies

Ingredients
- 1 cup almond flour
- 2 tbsp coconut flour
- 1 tsp baking powder
- 1/8 tsp salt
- 4 oz cream cheese, softened
- 1/2 cup swerve (or equivalent granular sweetener)
- 1 egg
- 1/2 tsp vanilla
- 1/4 tsp stevia extract
- 1 cup strawberries, chopped
- 1/2 cup blueberries

Preheat oven to 325F; line baking sheet(s) with parchment paper

In a medium bowl, whisk together almond flour, coconut flour, baking powder, and salt

In a large bowl, beat cream cheese and butter together with sweetener until light and fluffy; beat in egg, vanilla, and setvia until smooth

Add almond flour mixture in two additions, scraping down bowl as needed; carefully fold in berries until mixed

Roll into 1-in balls and place on prepared baking sheets; gently flatten balls to be about 1/2-in thick

Bake 15-20 min until just firm to the touch and barely beginning to brown

Remove and cool on pans
