Ingredients
- 6 boneless skinless chicken breast halves
- 4 tbsp. butter
- 3 tbsp. Dijon mustard
- 3 tbsp. freshly squeezed lemon juice
- 1/2 tbsp. finely chopped fresh tarragon
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 6 saltine crackers, crushed
- 1/3 cup freshly grated parmesan cheese
Directions

eheat oven to 425. Place chicken in lightly greased baking pan. One layer in pan. Melt butter, stir in all ingredients except last two. Pour over chicken. Mix together the crackers and cheese and sprinkle over chicken. Cook until chicken is heated through and slightly browned on top about 35 minutes.
