cheesecake with blueberry topping

Ingredients

  • 2 8 oz cream cheese
  • 12 oz firm tofu
  • 1 cup sugar
  • 1 t vanilla
  • Pinch of salt
  • 3 cups blueberries
  • 3/4 cup sugar
  • 2 T butter
  • 2 T cornstarch
  • 1 T lemon juice

Directions

  1. Blend smooth

  2. Fill crust

  3. Bake @ 370 for 30 minutes

  4. Cool at room temp and chill overnight

  5. Combine ingredients and cook till thickened 4 minutes
