Ingredients
- 3/4 cup lemon juice
- 1 tbsp. Dijon mustard
- 1 cup evoo
- 4 oz sundried tomatoes
- 4 oz pitted kalamata olives
- 1 tbsp. capers
- 1 tsp sea salt
- 1/2 tsp freshly cracked black pepper
- 4 (6-8 oz) salmon fillets
Directions

Whisk together lemon juice and Dijon mustard, then add olive oil and whisk. Add tomatoes, olives, capers, salt and pepper.

Arrange filets in a baking dish and pour sauce over top. Bake at 400 for 10 minutes.
