Cheesy Summer Squash Casserole

Ingredients
- 4 small to medium summer squash, sliced (about a quarter of an inch thick)
- 1 sweet onion, chopped
- 3 tomatoes, chopped
- Garlic powder, salt and pepper to taste
- 2 cups of shredded sharp cheddar
- Olive oil, to grease the pan
Directions

Preheat the oven to 350 degrees.

Grease a baking dish (9 × 9 works best).

Layer half of the sliced squash across the bottom of the pan, and sprinkle with spices.

Spread half of the chopped onion on top of the squash and then layer half of the tomatoes on top of that.

Add half the cheese and repeat until you’ve run out of ingredients.

Bake, uncovered, for about an hour or until the dish gets tender.
