Sara Lee Carrot Cake

Ingredients

  • 2 eggs, beaten
  • 1 tsp. vanilla extract
  • 3/4 c vegetable oil
  • 1 tsp. salt
  • 1 1/2 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 c sugar
  • 1 1/4 c flour, plus flour for the pan
  • 1 c finely grated carrots
  • 1 c chopped walnuts, extra for garnish
  • 1/2 c golden raisins (optional)
  • Frosting:
  • 6 oz. cream cheese, softened
  • 8 tbsp.(1/2c) butter, softened
  • 1 LB confectioners' sugar
  • 1 1/2 tsp. grated orange zest

Directions

  1. eheat oven to 325. Grease & flour 9" pan.

  2. Combine all ingredients, except the carrots.

  3. Beat for 3 min. on medium-high speed.

  4. Stir in the carrots, walnuts & raisins

  5. Spread in pan and bake 45-50 min.

  6. Frosting:

  7. Beat cream cheese & butter on high til fluffy

  8. On medium speed, add 1/2 conf. sugar

  9. Increase to high & add Orange zest & extract

  10. Beat 1 min. on high.

  11. Reduce to medium, add remaining sugar

  12. Frosting needs to be at room temp to spread.
