Sara Lee Carrot Cake

Ingredients
- 2 eggs, beaten
- 1 tsp. vanilla extract
- 3/4 c vegetable oil
- 1 tsp. salt
- 1 1/2 tsp. baking powder
- 2 tsp. cinnamon
- 1 c sugar
- 1 1/4 c flour, plus flour for the pan
- 1 c finely grated carrots
- 1 c chopped walnuts, extra for garnish
- 1/2 c golden raisins (optional)
- Frosting:
- 6 oz. cream cheese, softened
- 8 tbsp.(1/2c) butter, softened
- 1 LB confectioners' sugar
- 1 1/2 tsp. grated orange zest
Directions

eheat oven to 325. Grease & flour 9" pan.

Combine all ingredients, except the carrots.

Beat for 3 min. on medium-high speed.

Stir in the carrots, walnuts & raisins

Spread in pan and bake 45-50 min.

Frosting:

Beat cream cheese & butter on high til fluffy

On medium speed, add 1/2 conf. sugar

Increase to high & add Orange zest & extract
-
Beat 1 min. on high.

Reduce to medium, add remaining sugar
-
Frosting needs to be at room temp to spread.
