Zucchini Cake

Moist cake.
If you like Carrot Cake, here’s another to enjoy!

Prep time: 15 minutes
Cook time: 60 minutes
Serves 16 people

Ingredients

  • 2 C flour
  • 1 1/4 C castor sugar
  • 1/2 t salt
  • 1 t baking soda
  • 3/4 t baking powder
  • 2 t cinnamon
  • 1 t vanilla
  • 3 eggs
  • 2/3 C vegetable oil
  • 2 C grated zucchini
  • Icing:
  • 125 g cream cheese
  • 1/4 C butter, softened
  • 1 1/2 C icing sugar

Directions

  1. Beat eggs, oil and vanilla essence.

  2. Add sifted dry ingredients.

  3. Stir in zucchini.

  4. Bake in lined 9" cake tine at 180oC, approx 1 hour.

  5. Ice with cream cheese icing when cold

  7. Cream ingredients together.

  8. Can halve quantities if less icing wanted.
