Zucchini Cake

Moist cake.

Cook time: 60 minutes
Serves 16 people

Ingredients
- 2 C flour
- 1 1/4 C castor sugar
- 1/2 t salt
- 1 t baking soda
- 3/4 t baking powder
- 2 t cinnamon
- 1 t vanilla
- 3 eggs
- 2/3 C vegetable oil
- 2 C grated zucchini
- Icing:
- 125 g cream cheese
- 1/4 C butter, softened
- 1 1/2 C icing sugar
Directions

Beat eggs, oil and vanilla essence.

Add sifted dry ingredients.

Stir in zucchini.

Bake in lined 9" cake tine at 180oC, approx 1 hour.

Ice with cream cheese icing when cold

Cream ingredients together.

Can halve quantities if less icing wanted.
