Lemon Yogurt Cake

Another one of those sugar & lemon glazed cakes, to make use of the excess lemons!
Prep time: 15 minutes
Cook time: 45 minutes
Serves 12 people

Ingredients
- 1 1/2 C flour
- 2 t baking powder
- 1/2 t salt
- 1 C plain yogurt
- 1 C sugar
- 3 large eggs
- grated zest 2 lemons
- 1/2 C vegetable oil
- Glaze:
- 1/3 C sugar
- 1/3 c lemon juice
Directions

Sift dry ingredients.

Mix yogurt, sugar, eggs, lemon zest and oil.

Fold wet and dry mixes until combined.

Bake in paper-lined round cake tin, or loaf tin, at 180oC approx 45 minutes.

Cool in tin for 10 minutes.

Pour lemon syrup over cake, allowing it to soak in.

Glaze:

Warm together sugar and lemon juice, until sugar is dissolved.
