Date and Pecan Loaf

Toasted pecans add to the flavour of this nice loaf.

Cook time: 50 minutes
Serves 15 people

Ingredients

  • 1 1/2 C dates
  • 3/4 C brown sugar
  • 60 g butter
  • 1 1/4 C boiling water
  • 1 t baking soda
  • 1 egg, beaten
  • 2 t vanilla essence
  • 2 C self raising flour
  • 1 C pecans, toasted

Directions

  1. Mix together first 4 ingredients until combined.

  2. Add remaining ingredients, mixing briefly.

  3. Bake in paper lined loaf tin at 180oC, approx 50 minutes.
