Queen Cakes

Bake these in Patty Pans, not regular Muffin or Cup Cake size tins
Prep time: 10 minutes
Cook time: 15 minutes
Serves 24 people
Ingredients
- 1 1/2 C self raising flour
- 2/3 C castor sugar
- 125 g butter, softened
- 3 eggs
- 1/4 C milk
- 3 T currants
Directions

Sift flour into bowl, add remaining ingredients, except currants.

Beat 3 minutes.

Fold through currants.

Bake heaped tablespoons of mixture in paper lined patty tins at 180oC, approx 15 minutes.

Cool and dust with icing sugar to serve.
