Tangy Lemon Slice

Absolutely divine, with a melt -in-the-mouth shortbread base and lemony topping.

Ingredients

  • Base:
  • 100 g flour
  • 6 T cornflour
  • 1/4 C castor sugar
  • 100 g cold butter, cubed
  • Topping:
  • 4 eggs
  • 1 3/4 C castor sugar
  • zest 1 lemon
  • 3/4 C fresh lemon juice
  • 1/4 C flour, sifted

Directions

  1. Base:

  2. Place all ingredients into food processor bowl, blend until it resembles fine breadcrumbs.

  3. Place mixture into greased and paper-lined slice tin, pressing down firmly.

  4. Bake at 180oC approx 15-20 minutes until lightly golden.

  5. Remove from oven and set aside.

  6. Topping:

  7. Using a hand whisk, whisk together eggs, sugar and lemon zest, until thick and pale.

  8. Add lemon juice and sprinkle flour over mixture, whisking until well combined and there are no lumps.

  9. Pour lemon mixture over cooked base and bake further 30-35 minutes until set and golden.

  10. Set aside to cool, and when cold, cut using a hot, wetted knife.
