Tilapia Tots

Makes about 18 tots; approximately 4g carb per tot

Cook time: 10 minutes
Serves 5 people
Ingredients
- 2 tilapia fillets (or other white fish)
- 2 eggs
- 1/2 cup shredded cheddar cheese
- 1/2 cup almond meal
- 1/2 tsp baking powder
- 1/4 tsp lemon pepper
- 1/2 tsp garlic powder
- 1/4 tsp salt

Bake fish fillets until they flake easily with a fork; place them in a medium bowl and flake completely

Allow the fish to cool 5 minutes and then stir in eggs and cheese

In a small bowl, combine almond meal, baking powder, lemon pepper, garlic powder, and salt; add dry ingredients to fish mixture and stir

Melt some coconut oil or butter in a pan on the stove; form mixture into balls of about 2 tbsp and fry until golden all around and set in the center
