Rock Cakes

Serves 8 people

Ingredients
- 2 C self raising flour
- 1/3 C butter
- 1/2 C sugar
- 1/2 t ginger
- handful dried fruit
- 1 egg, lightly beaten
- 5-6 T milk
Directions

Rub butter into sifted flour and ginger.

Mix in remaining ingredients, to make a stiff dough.

Bake spoonfuls of mix on paper-lined tray at 200oC, approx 10-15 minutes.

Cool and serve with butter if desired.
