Scalloped Corn Casserole

Ingredients

  • 2 eggs beaten
  • 1 can whole kernel corn, drained
  • 1 can creamed corn
  • 1 stick butter, melted
  • 4 T. (heaping) flour
  • 2 T. sugar
  • 1/4 C. diced red or green pepper
  • 1 C. whole milk
  • 1/2 C. shredded cheddar cheese
  • 1/4 t. each salt and pepper

Directions

  1. Preheat oven to 350°. Spray 2 qt. baking dish with cooking spray.

  2. In a bowl, whisk the eggs; add the remaining ingredients and mix well.

  3. Pour into prepared baking dish.

  4. Bake for 1 hour, 20 minutes. Let set 10 minutes before serving.
