Ingredients

  • 1.5 cups whole wheat-white flour (or whole wheat pastry flour)
  • 1/2 teaspoon kosher salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 6 tablespoons unsweetened cocoa powder
  • 3/4 cup unsweetened apple sauce
  • 3/4 cup skim milk
  • 3 egg whites
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar
  • Aerated whipped cream

Directions

  1. Preheat oven to 325 degrees.

  2. Prepare 4 standard loaf pans with oil spray.

  3. In a large bowl, whisk together the flour, salt, baking powder, baking soda, and cocoa powder.

  4. In a separate medium bowl, whisk together the apple sauce, milk, sugar, egg whites, and vanilla.

  5. Add wet ingredients to dry ingredients; fold the batter until just combined.

  6. Pour evenly into the 4 prepared loaf tins (you’ll have a very small layer of batter in each).

  7. Bake for approx. 15-18 minutes or until a toothpick inserted into the center of the loaf comes out clean.

  8. Allow to cool for at least 30 minutes.

  9. Cut contents of each loaf pan into 5 pieces, the short way, creating mini chocolate cakes. Carefully remove each and place on platter or plate.

  10. Squirt whipped cream (about 2 tablespoons worth) along the top of 1 chocolate mini-cake strip.

  11. Gently top with another.

  12. Repeat with remaining.

  13. Or save and store in fridge or freezer and enjoy at another time.
