Ingredients
- 1 medium head broccoli, roughly chopped
- 500g dried linguine or spaghetti
- 5 tbsp olive oil
- 3 garlic cloves, crushed
- 1/2 tsp dried red chilli flakes
- 2 x 200g cans tuna in spring water, drained
- 2 tbsp finely grated fresh Parmesan
Directions
-
Cook the broccoli in a large, deep saucepan of boiling salted water for about 2 minutes. Remove with a slotted spoon and set aside, covered. Cook the pasta in the same water according to packet instructions or until al dente. Drain, toss with 1 tablespoon of the oil, then cover and set aside.
-
Return the pan you cooked the pasta in to a medium heat to dry off. Add the remaining olive oil, then the garlic, chilli and cooked broccoli. Cook, stirring, for 2 minutes, then remove from the heat. Add the pasta and toss together. Add the tuna and Parmesan, season with freshly ground black pepper and gently mix through. Divide between deep plates to serve.
