Bourbon Chicken

Ingredients

  • 6 pounds chicken breast
  • 2 T coconut oil
  • 6 clove garlic
  • 1.5 tsp ginger
  • 2.25 tsp crushed red pepper
  • 1 cup apple juice or cider
  • 1/2 cup coconut sugar
  • 6 T ketchup
  • 3 T cider vinegar
  • 1 cup water
  • 1 cup soy sauce

Directions

  1. Heat oil in a large skillet.

  2. Add chicken pieces and cook until lightly browned. Remove chicken.

  3. Add remaining ingredients, heating over medium heat until well mixed and dissolved.

  4. Add chicken and bring to a hard boil. Reduce heat and simmer for 20 minutes.

  5. Serve over hot rice.

    • Can also do this in Instant Pot, brown chicken on Saute setting, then add everything else and Manual cook on high pressure for 15 minutes. Thicken sauce with a cornstarch slurry
