Bourbon Chicken

Ingredients
- 6 pounds chicken breast
- 2 T coconut oil
- 6 clove garlic
- 1.5 tsp ginger
- 2.25 tsp crushed red pepper
- 1 cup apple juice or cider
- 1/2 cup coconut sugar
- 6 T ketchup
- 3 T cider vinegar
- 1 cup water
- 1 cup soy sauce
Directions

Heat oil in a large skillet.

Add chicken pieces and cook until lightly browned. Remove chicken.

Add remaining ingredients, heating over medium heat until well mixed and dissolved.

Add chicken and bring to a hard boil. Reduce heat and simmer for 20 minutes.

Serve over hot rice.

- Can also do this in Instant Pot, brown chicken on Saute setting, then add everything else and Manual cook on high pressure for 15 minutes. Thicken sauce with a cornstarch slurry
