Panettone French toast with mixed berries

Ingredients

  • 3 medium eggs
  • 5 tbsp single cream
  • 5 tbsp milk
  • 2 tbsp caster sugar
  • 1/2 tsp vanilla extract
  • 4 slices panettone, halved
  • 250g frozen mixed berries, thawed
  • 2 tbsp icing sugar, plus extra to dust
  • 40g unsalted butter

Directions

  1. In a wide, shallow bowl, beat the eggs, cream, milk, sugar and vanilla. Add the panettone and soak for 10 minutes, turning occasionally.

  2. Meanwhile, in a food processor, whizz half the berries with the icing sugar and 1 tbsp water until smooth. Combine with the remaining berries and set aside.

  3. Heat half the butter in a non-stick frying pan over a medium heat. Drain the panettone and fry half the pieces for 2 minutes each side, until golden and puffed. Set aside in a warm place. Repeat, using the rest of the butter.

  4. Place 2 slices on each plate. Dust with icing sugar, top with the berries and serve with crème fraîche.
