Basic Uncooked Cheesecake

Addition of fruit (eg: passionfruit, chopped berries, fruit salad), melted chocolate swirled through, or topped with a coulis to serve

Ingredients

  • Base:
  • 200 g plain sweet biscuits, crushed finely
  • 100 g butter, melted
  • Filling:
  • 350 g cream cheese, softened
  • zest 1 lemon or lime
  • 397 g tin sweetened condensed milk
  • 1/3 C lemon juice
  • 10 g gelatine, softened in little cold water
  • 150 ml cream, whipped to soft peaks

Directions

  1. Base:

  2. Combine crushed biscuits and melted butter and press into base and sides of greased 20cm springform pan.

  3. Filling:

  4. Beat together cream cheese, citrus zest and sweetened condensed milk.

  5. Add softened gelatine to lemon juice, then fold into cream cheese mixture.

  6. Fold in whipped cream an pour into biscuit crust.

  7. Chill 4 hours, or overnight.
