Ingredients

• 1/2 stick of butter
• 2 cups mashed sweet potatoes (I cook them in a pot of boiling water after cutting off the skin and then mash them once they're cooked, just like mashed potatoes)
• 1/4 cup milk
• 2 eggs
• 1 tsp. vanilla
• 1 cup sugar
• Prepare topping:
• 1 - 8 oz can crushed pineapple, drained
• 1/4 cup flour
• 1/2 cup sugar
• 1 egg
• 1 stick melted butter

Directions

1. Casserole:

2. *Melt butter, mix all ingredients and pour into baking dish

3. Prepare topping:

4. **Mix pineapple and flour. Add all other ingredients and spread over top. Bake at 350 degrees for 30 minutes.

5. **I double this to make into a 9×13 casserole dish.
