Roasted butternut squash

Ingredients

  • 675g butternut squash, halved and deseeded
  • 3 tbsp melted butter or olive oil

Directions

  1. Preheat the oven to 200˚C/fan 180˚C/gas 6. Cut the butternut squash into 2.5cm cubes.

  2. Put the squash cubes onto a foil-lined baking sheet. Drizzle with the melted butter or oil and toss until the cubes are evenly coated. Season with salt to taste, then spread them out in a single layer. Put into the oven and roast for 45 minutes, until tender. Check they are cooked with the tip of a knife. Serve hot.
