Rhubarb Cake

Ingredients
- 2 Tbsp butter (no substitutes) +2 Tbsp+ 1/2 cup
- 1 C sugar + 1/4 C + 3/4 C
- 1 egg
- 2 C flour + 1/4 C
- 1tsp baking powder
- 1tsp baking soda
- 1 C buttermilk
- 2 C chopped rhubarb
- 1/2 C evaporated milk
- 1 tsp vanilla
Directions

Cream 1 C sugar and 2 Tbsp butter together. Add egg. In separate bowl, combine 2 C flour, baking powder, soda, and salt. Alternate adding it to creamed mixture with buttermilk. stir in rhubarb. Pour into a greased 9" square pan.

Combine 1/4 C flour, 1/4 C sugar, 2Tbsp melted butter. Sprinkle over batter.

Cook at 350 for 40-45 min.

For sauce, melt 1/2 C butter in a pan. Add 3/4 C sugar and evaporated milk. Bring to boil; cook and stir or 2-3 min until thickened. Remove from heat, stir in vanilla. Serve with cake.
