Pepperoni Pizza Chicken Tenders

Ingredients
- 30-35 small slices pepperoni
- 1-2 lb chicken tenders
- 4 tbsp (heaping) almond meal or almond flour
- 1 tbsp minced onion
- 2 tbsp (heaping) Parmesan cheese
- 1/4 tsp salt
- 1-1/2 tsp Italian seasoning
- 1 egg

Preheat oven to 400 and line a baking sheet with parchment paper or foil

Place pepperoni slices in a single layer and bake for 7 min until crisp; remove from oven and allow to cool

Crush pepperoni cups and mix with almond meal, onion flakes, Parmesan, and salt; spread onto a plate or shallow bowl

Beat the egg in a small bowl; dip chicken pieces in egg and dredge through pepperoni mixture

Bake 15-20 min until cooked through
