Ingredients
- 3 c sugar
- 3 eggs
- 3 c mashed potatoes (prepared)
- 1 1/2 c evaporated milk
- 1 tbsp vanilla
- 9 c self-rising flour
- Oil for frying
Directions

In a large bowl combine sugar and eggs and using a mixer, beat until creamy.

Next add mashed potatoes, evaporated milk and vanilla mixing until all ingredients are blended well.

Add flour, 1 cup at a time, and mix until dough starts to get stiff. (If you are using a portable mixer, you will eventually have to stir by hand because the dough will get too stiff. Stand mixers can mix it without problems but it takes a very big bowl to hold all 9 cups of flour). The dough will be a little sticky.

Using a large spoon, place some of the dough onto a floured surface and start kneading some of the flour in with the dough until you obtain the consistency that will allow you to roll out the dough for cutting.

Roll out dough to approximately ΒΌ in thick. Using a doughnut cutter, cut out the donuts and drop in a fryer or electric skillet of hot oil and cook until donuts are browned on both sides and done in the middle, (If they get brown before the middle is done, reduce the heat).

Place donuts on a cookie sheet (lined with paper towels to absorb excess oil) and let cool completely.

After donuts have cooled, dip them in icing.
