Mexican Sloppy Joe Tortilla Cups

Ingredients
- 4 (6 inch) flour tortillas
- 2 teaspoons olive oil
- 1 pound ground chicken breast
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 1/2 cups jarred black bean and corn salsa
- 1/4 cup mayonnaise
- 1/4 cup red onion, finely chopped
- 2 teaspoons lime zest
- 1 tablespoon lime juice
Directions

Heat the oven to 400 degrees. Place 4 (10 oz) custard cups on a baking sheet. Spray the insides of the cups with nonstick spray.

Gently press a tortilla into each cup. Back until golden and crisp. Let the tortillas cool in the cups. Transfer cups to serving plate.

Heat the oil in a large nonstick skillet over medium-high heat. Add the chicken, salt, and pepper and cook until chicken is browned.

Stir in the salsa and heat through.

Mix the mayonnaise, onion, lime zest, and lime juice into a small bowl. Spoon about 3/4 cup chicken mixture into each tortilla cup.

Top each tortilla cup with 1 1/2 tablespoons of the mayonnaise mixture.
