Chicken Pot Pie

Ingredients

  • 3 cups cooked chicken, cubed
  • 8 tablespoons butter
  • 1 cup green peas and/or carrots
  • 1 can (10 3/4 oz) cream of celery soup
  • 1 cup water
  • 1 cup biscuit mix
  • 1 cup milk

Directions

  1. Preheat the oven to 400 degrees. Melt the butter in a small cup in the microwave.

  2. Put chicken across the bottom of a 9×13 glass baking dish and distribute the vegetables over the chicken.

  3. In a medium bowl, whisk the condensed soup with the water and pour over the chicken and vegetables.

  4. Using the same bowl, whisk the biscuit mix, milk, and melted butter until smooth. Pour the biscuit mixture over the chicken and vegetables.

  5. Bake for 30 minutes or until the crust is lightly browned and the casserole is bubbling around the edges.
