Classic Lemon Bars

Ingredients
- 1 1/2 sticks butter unsalted
- 1 cups all purpose flour
- 1/4 cup packed light brown sugar
- 1/2 cup powder sugar
- 1/4 tsp salt
- For Filling
- 4 large eggs plus 2 egg yolks
- 2 cups granulated sugar
- 1/3 cup all purpose flour
- 1 tsp lemon zest
- 1 cup fresh lemon juice (about 8 lemons)
Directions

Make Crust

Position rack in middle of over and preheat to 350

Grease 9 × 13 pan with vegetable oil and line with foil leaving 2 inch overhang on all sides ; grease the foil with oil

Pulse butter, flour, both sugars and salt in food processor until dough comes together and press firmly in bottom and 1/2 inch up sides.

Bake until golden about 25 minutes.

Make Filling

Whisk all eggs, sugar and flour in bowl until smooth. Whisk in lemon zest and juice

ve crust from oven and reduce temp to 300.

Pour filling over the warm crust and return to the oven.

Bake until filling is set about 40 minutes

Let bars cool a little, cut into squares, refrig for at least 2 hours

Lift out of pan with foil and re-cut and dust with conf. sugar.
