Ingredients
- 3/4 cup of Italian dressing, prepared {use your favorite brand or homemade – preferably w/out HFCS}
- 1 can black eyed peas (drained)
- 1 can black beans (drained and rinsed)
- 1 can of yellow niblet corn
- 1 small can of white shoepeg corn
- 1 small onion, chopped finely or 3 green onions
- 1 yellow bell pepper {you can also use green or red}, chopped finely
- 3 small fresh tomatoes, finely chopped
- 2 to 3 cloves of garlic, minced
- 1 Avocado (optional)
Directions

Mix all ingredients together. Stir and refrigerate for at least 2 to 3 hours (even better if you can do it a day before). Serve chilled to room temperature with GMO-free tortilla chips of GMO- free corn chips
